Ingredients

Scale

Protein

  • 1 lb chicken breast or thighs, trimmed

Vegetables & Grains

  • 2 cups fresh corn kernels (about 2 ears of corn)
  • 2 cups cooked white or brown rice

Street Corn Sauce

  • ½ cup mayonnaise or Greek yogurt
  • Juice of 1 lime (about 2 tablespoons)
  • 1 teaspoon chili powder
  • Pinch of salt

Seasonings & Garnishes

  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder (for chicken seasoning)
  • Salt to taste
  • 2 tablespoons olive oil (for cooking)
  • ¼ cup fresh cilantro, chopped
  • ¼ cup crumbled Cotija or feta cheese
  • Lime wedges, for serving

Instructions

  1. Prepare the Chicken: Season the chicken breasts or thighs with garlic powder, chili powder, salt, and drizzle with olive oil. Grill or pan-sear over medium-high heat for about 6-7 minutes per side until cooked through and charred. Let the chicken rest for a few minutes before slicing into bite-sized pieces.
  2. Cook the Corn: While the chicken cooks, heat a little oil in a pan over medium-high heat. Add the fresh corn kernels and sauté until slightly browned and caramelized, about 5-7 minutes, stirring occasionally to develop a smoky street corn flavor.
  3. Make the Street Corn Sauce: In a small bowl, whisk together mayonnaise or Greek yogurt, lime juice, chili powder, and a pinch of salt until well combined. This sauce will coat the warm corn and give it its signature creamy tanginess.
  4. Assemble the Bowl: Place cooked rice at the bottom of your serving bowls. Top evenly with sliced chicken, then add the caramelized corn mixed with the street corn sauce. Finish by sprinkling crumbled Cotija or feta cheese and fresh chopped cilantro over the top. Serve with lime wedges on the side for extra brightness.

Notes

  • Use fresh, in-season corn for best sweetness and texture instead of frozen corn.
  • Allow the chicken to rest after cooking to retain juiciness.
  • Grilling chicken and corn enhances smoky flavor but pan-searing works well too.
  • Adjust creamy sauce consistency by adding more lime juice or mayonnaise/yogurt as preferred.
  • Toast chili powder briefly prior to adding to sauce to boost its aroma and depth.
