Ingredients

Scale

Main Ingredients

  • 34 lb chuck roast
  • 4 large carrots, chopped
  • 4 medium potatoes, chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (or rosemary/sage as a variation)

Gravy Thickener

  • 3 tablespoons all-purpose flour or cornstarch (or arrowroot powder for gluten-free)
  • 3 tablespoons cold water

Optional

  • 1 tablespoon cooking oil (for browning)

Instructions

  1. Prepare the Roast: Pat the chuck roast dry with paper towels. Season generously with salt and pepper on all sides to enhance its natural flavors.
  2. Brown the Roast: Heat one tablespoon of oil in a skillet over medium-high heat. Brown the roast for 4-5 minutes per side until a deep golden crust forms. This locks in juices and adds rich flavor to both the meat and the gravy.
  3. Add Vegetables and Liquid: Place chopped carrots, potatoes, and onion into the bottom of the crock pot. Sprinkle minced garlic on top. Nestle the browned roast on top of the vegetables. Pour in beef broth and Worcestershire sauce so that the liquid surrounds but doesn’t fully cover the ingredients.
  4. Cook Slow and Low: Cover and cook on low for 7-8 hours or on high for 4-5 hours. This slow cooking process tenderizes the meat and infuses the vegetables with savory juices.
  5. Make the Gravy: After cooking, carefully remove the roast and vegetables. Skim off excess fat from the remaining liquid. Mix flour or cornstarch with cold water to create a slurry, then stir it into the liquid. Cook uncovered on high for 10-15 minutes until the gravy thickens to a silky, smooth consistency.
  6. Serve and Enjoy: Slice the roast against the grain and serve with the cooked vegetables. Drizzle the hot gravy generously over the meat and veggies for a comforting and satisfying meal.

Notes

  • Brown the meat to develop deeper flavor and a richer color.
  • Cook on low heat for longer to keep the roast tender and juicy.
  • Use fresh vegetables for better texture and flavor.
  • Add thickener gradually to avoid lumps in the gravy.
  • Don’t overcrowd the crock pot to ensure even cooking and proper heat circulation.
