Ingredients

Scale

Main Ingredients

  • 1 lb ground beef
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 bag (about 12 oz) frozen mixed vegetables
  • 1 bag (about 32 oz) frozen tater tots
  • 1 cup shredded cheddar cheese, divided
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Brown the Beef: Heat a skillet over medium-high heat and cook the ground beef with diced onions and minced garlic until the beef is fully browned and fragrant. Drain excess fat to avoid greasiness in the casserole.
  2. Combine the Filling: In a large bowl, mix the browned beef with the condensed cream of mushroom soup, frozen mixed vegetables, and half of the shredded cheddar cheese. Season with salt and pepper to taste, then stir gently until well combined.
  3. Assemble the Casserole: Transfer the beef mixture into a greased baking dish, spreading it evenly. Arrange the frozen tater tots in a single layer on top, covering the filling completely.
  4. Bake Until Golden: Preheat oven to 375°F (190°C). Bake the casserole for 30 to 40 minutes, or until the tater tots are crispy and golden brown. During the last 5 minutes, sprinkle the remaining cheddar cheese on top to melt and add extra cheesy goodness.
  5. Let It Rest and Serve: Remove from the oven and let the casserole rest for 5 minutes so it sets slightly for easier serving. Serve warm and enjoy!

Notes

  • Use room temperature ingredients to ensure even cooking and smooth cheese melting.
  • Brown the beef in batches if needed to prevent steaming and to get a better sear.
  • Spread tater tots evenly for a consistent crispy crust.
  • Letting the casserole rest before serving helps flavors meld and keeps it intact when served.
  • Consider adding breadcrumbs or bacon bits on top for extra crunch and flavor.
