Ingredients

Scale

Dry Ingredients

  • 1 ¾ cups all-purpose flour (or gluten-free flour blend for variation)
  • 2 tablespoons cocoa powder
  • 1 tablespoon espresso powder
  • ¼ teaspoon pinch of salt

Wet Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup mascarpone cheese or cream cheese, softened

Instructions

  1. Prepare the Wet Ingredients: Cream the unsalted butter with sugar until light and fluffy. Beat in the eggs, espresso powder, and vanilla extract until the mixture is smooth and well combined to form the base of your dough.
  2. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cocoa powder, and a pinch of salt, ensuring an even blend for the cookie texture and flavor.
  3. Combine Wet and Dry: Gradually add the dry ingredient mixture to the wet ingredients. Stir gently until just combined, avoiding overmixing to keep the cookies tender.
  4. Add Cream Cheese or Mascarpone: Fold in the softened mascarpone or cream cheese carefully, incorporating creamy richness to replicate the tiramisu texture.
  5. Shape and Bake: Scoop small balls of dough onto a parchment-lined baking sheet, spacing them adequately. Bake in a preheated oven at 350°F (175°C) for 10 to 12 minutes until cookie edges are set but centers remain soft.
  6. Cool and Decorate: Allow the cookies to cool on a wire rack. Once cooled, dust with cocoa powder or drizzle melted chocolate for an elegant tiramisu finish and enhanced flavor.

Notes

  • Use fresh, high-quality espresso powder for the best coffee taste.
  • Do not overmix the dough to prevent tough cookies; fold gently until combined.
  • Ensure all wet ingredients, especially butter and mascarpone or cream cheese, are at room temperature for smooth mixing.
  • Chill the dough in the refrigerator for 30 minutes before baking to reduce spreading and improve texture.
  • Watch baking time closely and remove cookies when centers are still slightly soft to maintain chewiness and moisture.
