  • 1/2 cup fresh spinach, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil, divided
  • 1 teaspoon Italian seasoning
  • Salt, a pinch
  • 1/2 cup marinara sauce

Instructions

  1. Prepare the Filling: Finely chop the bell peppers, mushrooms, spinach, and garlic. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the veggies and sauté with a pinch of salt, Italian seasoning, and garlic until tender but still vibrant, about 3-5 minutes. Remove from heat and set aside.
  2. Roll Out the Dough: Sprinkle flour on your work surface and roll the pizza dough into a large rectangle about ¼ inch thick, creating an even canvas for layering the toppings.
  3. Add Sauce and Filling: Spread a thin, even layer of marinara sauce over the rolled dough, leaving a small border along the edges. Evenly sprinkle the sautéed vegetable filling over the sauce, then top with shredded mozzarella cheese to ensure a gooey center.
  4. Roll and Slice: Starting from the long edge, carefully roll the dough tightly into a log, similar to a jelly roll. Using a sharp knife, slice the log into 1 to 1½-inch wide rolls, revealing spiral layers of sauce, veggies, and cheese.
  5. Bake to Golden Perfection: Place the pizza rolls on a parchment-lined baking sheet. Brush the tops with the remaining olive oil to help achieve a golden crust. Bake in a preheated oven at 375°F (190°C) for 15-18 minutes, or until the rolls are puffed up and golden brown.
