Ingredients

Scale

Dark Chocolate Ganache

  • 200g good quality dark chocolate (70% cocoa or higher), finely chopped
  • 200ml heavy cream
  • 1 tablespoon unsalted butter

Coffee Mousse

  • 1 shot freshly brewed espresso or 60ml strong coffee, slightly cooled
  • 3 large egg yolks
  • 50g granulated sugar
  • 1 teaspoon vanilla extract
  • 240ml heavy cream (for whipping)

Instructions

  1. Prepare the Dark Chocolate Ganache: Chop the high-quality dark chocolate finely and place it in a heatproof bowl. Heat the heavy cream until it gently simmers, then pour it over the chocolate. Let it sit for a minute, then stir until the mixture is smooth and glossy. Add a tablespoon of butter and stir until melted and combined. Set the ganache aside to cool but not harden.
  2. Brew and Infuse the Coffee: Brew a fresh shot of espresso or strong coffee and allow it to cool slightly. Optionally, simmer the coffee briefly for a deeper flavor, taking care to avoid bitterness. Stir in the vanilla extract to round out the flavors.
  3. Whip the Egg Yolks and Sugar: In a heatproof bowl, whisk the egg yolks and sugar vigorously over a gently simmering water bath until the mixture becomes pale, thick, and creamy. This step ensures the mousse is rich and safe to consume.
  4. Combine Coffee and Egg Mixture: Slowly pour the cooled coffee into the yolk mixture while stirring constantly to avoid curdling. This creates the coffee-infused base for the mousse.
  5. Whip the Cream: Beat the heavy cream until soft peaks form — light, airy, and not overwhipped. This whipped cream provides the mousse with its signature light and fluffy texture.
  6. Fold Ingredients Together: Gently fold the coffee-egg mixture into the whipped cream, preserving as much air as possible to maintain the mousse’s delicate and airy consistency.
  7. Assemble and Chill: Layer or swirl the mousse and the dark chocolate ganache together in serving dishes. Refrigerate for at least 4 hours or preferably overnight to allow the flavors to meld and the mousse to set perfectly.

Notes

  • Chocolate Quality Matters: Using premium dark chocolate significantly enhances flavor and texture.
  • Temper Your Eggs: Heating egg yolks with sugar ensures a smooth mousse base without lumps.
  • Don’t Overwhip Cream: Stop whipping at soft peaks to keep the mousse airy.
  • Slowly Fold: Gently folding mixtures prevents deflating the mousse and maintains fluffiness.
  • Chill Thoroughly: Proper chilling is essential for setting and flavor development.
