Steak Pinwheels

Steak Pinwheels

Steak Pinwheels are a savory and visually appealing dish featuring tender steak, melted cheese, fresh herbs, and flavorful vegetables wrapped in flaky phyllo dough or puff pastry. Perfect as a quick weeknight dinner or an impressive appetizer, these pinwheels are customizable, easy to prepare, and reheatable for leftovers.

Ingredients

Scale

Steak

  • 1 lb flank steak or sirloin, thinly sliced

Dough

  • Phyllo dough or puff pastry, enough to cover fillings (about 8-10 sheets of phyllo or 1 sheet puff pastry rolled out)

Cheese

  • 1 cup shredded mozzarella or cheddar cheese

Fresh Herbs

  • 12 tbsp chopped parsley
  • 1 tsp fresh thyme leaves (optional)
  • 1 tsp chopped rosemary (optional)

Seasonings

  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Vegetables

  • 1 cup sautéed spinach or caramelized onions or bell peppers (your choice)

Instructions

  1. Prepare and Season the Steak: Slice the steak into thin, flat strips for easy rolling. Season generously with salt, pepper, smoked paprika, and garlic powder. Set aside to marinate briefly to let the flavors infuse.
  2. Prep the Dough: If using phyllo dough, gently layer sheets brushing each with melted butter for a crisp finish. For puff pastry, roll out to an even thickness, leaving enough space for fillings.
  3. Layer the Fillings: Spread a thin, even layer of cheese over the dough. Add sautéed vegetables and sprinkle fresh herbs on top, then evenly distribute the seasoned steak slices. Avoid overfilling to prevent tearing or uneven cooking.
  4. Roll and Slice: Carefully roll the dough tightly into a log, keeping the fillings inside. Chill the log for 15 minutes to firm it up. Using a serrated knife, slice into 1 to 1.5 inch thick rounds to form the pinwheels.
  5. Bake Until Golden: Place the pinwheels on a parchment-lined baking sheet. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes until the dough is golden and cheese is melted and bubbling.

Notes

  • Choose tender cuts of steak like flank or sirloin for best texture and easy slicing.
  • Don’t overfill the dough to avoid breakage and leaking during baking.
  • Chill the rolled log before slicing to maintain shape and prevent squishing.
  • Use a serrated knife for clean slices through dough and fillings.
  • Watch carefully during baking to prevent burning and achieve a perfect golden crust.
